While on many of our family adventures in Thailand you'll have the chance to try your hand at a Thai cooking class. Explore's Paula Wells recently travelled on Ancient Jungle and Tropical Beaches where she and her family made a three course meal. Her favorite dish was the main course - stir-fried chicken with cashew nuts. Here Paula shares the recipe which is simple enough for children to be involved in the preparation and making.
Ingredients
1 tablespoon vegetable oil
8 ounces diced chicken
4 ounces cashew nuts
2 ounces tomato
2 ounces onion
2 ounces carrot
2 ounces red bell peppers
1 tablespoon chilli paste (less if prefer less spicy)
1 tablespoon oyster sauce
0.5 tablespoon fish sauce
1 tablespoon chicken stock
1 scallion
How to make
This is a really simple meal to make.
1. Prepare the vegetables by chopping into small pieces. Reserve the scallion for garnish.
2. Heat the oil and brown the chicken in the pan over a medium heat, turning regularly to ensure it's evenly cooked throughout
3. Once the chicken is ready, add the rest of the stir-fry ingredients - vegatables, chilli paste, oyster sauce, fish sauce and chicken stock
4. Stir-fry for approximately 10-15 minutes.
5. Serve and garnish with the scallion.
6. Enjoy!
Paula said: "The whole family had great fun learning how to make this meal while in Thailand and we've eaten it a couple of times since we came home. It's really easy to make and reminds us all of the great time we had in Thailand. It's quite spicy so use less chilli paste for a milder version. Even if you've not been to Thailand or South East Asia, it's great to encourage your children to be a bit adventurous with their food, that way, when you are away from home the sudden change in the food they eat won't be such a big deal to them."
